I made this two ways. One exactly as written and the other with toasted chopped pecans, with vanilla and pineapple emulsions, as I always put pineapple in my carrot cake. I then used cream cheese emulsion in the royal icing. These cookies tasted like I was biting into a piece of Carrot cake. My husband said these were his favourite. Definitely a keeper recipe.
These cookies are delicious! Especially with the added 1/4 cup of toasted pecan pieces Lucie suggests. Yum!
